In 2015, the U.S. Food and Drug Administration did something it almost never does: it revoked an ingredient's "generally recognized as safe" status. Partially hydrogenated oil — the industrial fat behind most artificial trans fat — was ordered out of the American food supply, with a primary compliance deadline of June 2018. A decade later the phrase still turns up on labels. It also carries the heaviest single penalty in Nutrication's ingredient scoring: −10 of a possible 20 points. Half the entire measure, gone, for two words.
Most flagged ingredients are nothing like that. Carrageenan, polysorbate 80, sucralose, Yellow 5 — the honest scientific reading on most additives is that they are probably fine at the doses anyone actually eats. What makes them worth flagging is what they signal. No home kitchen stocks titanium dioxide. An ingredient list full of compounds you cannot buy at a grocery store is the fingerprint of an industrially formulated product, and that pattern — ultra-processing — is what large population studies keep associating with worse health outcomes.
Nutrication reads the whole list and scores it. Every food starts with a perfect 20 out of 20 on the ingredient-flags measure. Specific red-flag ingredients subtract points, credible certifications add points back, and the result is clamped between 0 and 20 before it joins the overall grade. Here is exactly what triggers a deduction, what earns a bonus, and why a trace of food dye is treated differently from a spoonful of trans fat.
The serious flags: no safe-amount argument
Seven ingredients carry penalties of −4 or worse, and the engine refuses to soften them no matter how far down the list they appear. In the code's own words, "there's no 'safe small amount' argument for those."

One wording detail matters here: "hydrogenated" without "partially" is a different ingredient. Fully hydrogenated oil produces essentially no trans fat, its safety status was never revoked, and Nutrication's additive encyclopedia explicitly calls it "not the same red flag."
The moderate flags: dyes, sweeteners, emulsifiers
Below the serious tier sit the cosmetic and convenience additives, at −1 to −3 points each.
- BHT and TBHQ (−3 each): synthetic preservatives that keep fats from going rancid, flagged on European food-safety assessments.
- Tartrazine (Yellow 5) and Allura Red (Red 40) (−3 each): the two most scrutinized artificial dyes, long debated for possible links to hyperactivity in children. Purely cosmetic — they add nothing but color.
- Polysorbate 80 and carboxymethylcellulose (−3 each): emulsifiers that research over the past decade has linked to changes in the gut microbiome, mostly in animal and early human studies.
- Generic "artificial colors" and "artificial flavors" (−2 each): catch-all phrases that hide the actual chemistry from you.
- Acesulfame-K, sucralose, and erythritol (−2 each): intense sweeteners and sugar alcohols. Sucralose is roughly 600 times sweeter than sugar; aspartame, about 200 times. Erythritol drew fresh scrutiny after 2023 research associated high blood levels with cardiovascular events.
- Carrageenan (−2): a seaweed-derived thickener common in plant milks and deli meat. The evidence against it is contested, hence the light touch.
- Added phosphates (−2): phosphoric acid, sodium phosphate, and the E338–E341 family. Added phosphates are absorbed far more completely than the phosphorus naturally present in food; EFSA set a group intake limit in 2019, and they matter most for people managing kidney health.
- MSG (−1): the gentlest flag in the system. The FDA considers it safe — its presence mostly signals heavy flavor engineering.
Two fairness rules: dose and double-counting
Ingredient lists are ordered by weight, and the engine uses that. When a list has at least eight entries and a minor additive sits in roughly the last third of it, the penalty is halved (never below 1 point) and the flag is labeled "(trace)" — the app tells you openly that it reduced the weight because the amount is small. This mercy applies only to the cosmetic tier, flags of −3 or less. High-fructose corn syrup in the last position is still −5.
The second rule: related flags don't stack. If a label lists Yellow 5 and also says "artificial color," you are not penalized twice — the specific dye's −3 counts and the generic −2 is suppressed. The engine scores the ingredient, not the vocabulary.
Positive flags: what earns points back
Deductions are half the story. Credible certifications add points, in three deliberate tiers:
- +3: USDA Organic, whole grain, "no added sugar" or unsweetened, and the AHA Heart-Check mark.
- +2: grass-fed, pasture-raised, high fiber (the FDA reserves that claim for foods with at least 20% of the Daily Value — 5 g or more — per serving), Mediterranean Diet, Low-FODMAP, Whole30, diabetes-friendly, and vegan.
- +1: non-GMO, vegetarian, keto, gluten-free, and paleo.
The tiering is the point. A gluten-free certification is rigorous, but it says nothing about whether a cookie is nutritious — hence +1, not +3. The engine also looks for these marks everywhere they might appear: the ingredient text, label tags, categories, even the product name. "Organic" in the title earns the bonus.
What a red flag really tells you
The editorial stance repeated throughout Nutrication's additive encyclopedia — roughly 60 entries, each with a plain-language explanation — is that most additives are benign but a telltale marker of an ultra-processed food. The signal matters more than the toxicity. That is why the same additive database feeds the NOVA processing classification: when a product has no NOVA tag on file, two or more recognized industrial additives classify it as NOVA group 4, ultra-processed — worth just 4 of that measure's 35 points — while exactly one lands it in group 3.
One flag also crosses into a second measure. The phrase "partially hydrogenated" anywhere in an ingredient list caps the separate fat-quality score at 1 of 15 points, on top of the −10 ingredient penalty. Trans fat is the only ingredient the engine singles out for a dedicated second penalty in another measure.
How Nutrication uses this
The ingredient-flags measure contributes up to 20 points toward the overall grade, alongside NOVA processing (35), Nutri-Score (30), nutrient density (20), glycemic load (15), and fat quality (15). Measures that lack real data are excluded and the rest re-normalize to 100 — the full arithmetic is in how we grade.
A worked example from the engine's own documentation: a soda listing high-fructose corn syrup, caramel color, phosphoric acid, and "artificial flavor" starts at 20, loses 5 for HFCS, 2 for phosphates, and 2 for artificial flavor — final score 11 of 20. Caramel color costs nothing: it lives in the educational encyclopedia (its 4-MEI concern is specific to ammonia-processed Class III and IV versions) but carries no penalty.
Every triggered flag surfaces in the app — negatives as warnings, positives as highlights — and each additive is tappable for its encyclopedia entry, from maltodextrin (a glycemic index actually higher than table sugar) to mono- and diglycerides (emulsifiers whose trans fat content is exempt from the Nutrition Facts trans-fat line).
And one honest limitation: when you scan a plate of food rather than a package, this measure switches itself off. A meal photo yields item names, not an ingredient list, and — again in the code's words — "granting a perfect 20/20 would be crediting the absence of evidence."
What to actually do
- Scan for "partially hydrogenated." It is the one ingredient genuinely worth walking away from.
- Read additive count as a processing signal, not a poison warning. If the list needs a chemistry degree, you're holding an ultra-processed food.
- Don't overvalue the label wall. Non-GMO and gluten-free are +1 certifications for a reason — they say little about nutrition.
- Trust the "(trace)" tag. A dye at the bottom of a long list is a footnote, not a dealbreaker.
- Short lists win twice: fewer flags here, and usually a better processing classification too.
